As someone who loves to eat healthily and maintain a healthy lifestyle, I enjoy cutting my vegetables myself for two major reasons.
The first reason is that I get to wash them properly to remove any dirt and reduce the risk of any contaminations if any. The second reason is that I get to wash them properly before cutting or slicing. That way, all the nutrients in the vegetables are locked in while I am cutting or slicing them.
This is not the case if you buy your vegetables in the market and it is being cut for you while you wash away the nutrients and use what is left to prepare your meals. Please check out the video here
